Papain
is a proteolytic enzyme from the cysteïne proteïnase
family. Electrophoretic analysis performed on the refined papain
from ENZYMASE shows four distinct cysteïne proteïnases
as per their increasing isoelectric points (Ip):
1. Papain "stricto sensu" (Ip: 8.7-8.9),
2. Chymopapain (Ip: 10.4-10.7),
3. Glycyl endopeptidase (Ip: 10.5 - 10.8),
4. Caricain (Ip: > 11.0).
The amino acid sequence of these enzyme components is very

The presence of small quantities of other enzymes such as
lysozyme, glutamine cyclotransferase, specific glucanases
and chitinases were also found.
